*RECIPE ALERT* Cinnamon-Date-Protein-Cake: I should be a rapper…or not…Lol

Happy Sunday Fitfam, hope you’re all having an awesome weekend!! In honour of the 100000034382432083’s of calories that are about to be consumed today due to Superbowl Sunday, I thought I’d play around in the kitchen with a calorie friendly recipe. This morning’s WOD was the stair master followed by some core work and Muay Thai style sparring. So it was only natural that I had to feed the beast post-workout. This recipe was super easy to make, all natural, gluten and dairy free! Most importantly it tastes absolutely delicious and I’d be hard pressed to say it doesn’t taste like one of those coffee cakes you’d pick up from your local bakery (minus the sugar, fat, and calories).

1 scoop Diesel Whey Protein Isolate by Perfect Nutrition in Milk Chocolate
1 scoop Diesel Whey Protein Isolate by Perfect Nutrition in French Vanilla
2 Egg Whites
1 Egg
2 Tbsp Coconut Flour
2 tsp baking powder
1/4 tsp Pink Himalayan Salt
1/2 tsp Cinnamon
1/2 cup milk of choice (I used unsweetened chocolate coconut milk)
1 tsp vanilla extract
1/4 cup boiled hot water
1/4 cup sweetener of choice (I used baking stevia)
2-3 Medjool pitted dates chopped (*chop dates and soak in the boiled water for 10 minutes before prepping the rest of the ingredients)

Preheat your oven to 350 degrees and spray a 7 inch circular pan with natural olive oil spray or a dab of coconut oil. Mix all dry ingredients until well combined. In a food processor, add the dates and the wet ingredients and pulse until combined (do not drain the water for the dates-add it into your food processor). Add wet to dry ingredients and pour in pan. Top with 1 tsp cinnamon mixed with 1 packet of stevia if desired. Bake for about 25-30 minutes or until an inserted toothpick comes out clean.
